After attending a cooking class in Chiang Mai — with the curious enthusiasm of someone eager to learn the art of distant flavors — I tried my hand at preparing some of the most beloved dishes in Thai cuisine: the fragrant Pad Thai, the spicy and enveloping Tom Yum Goong.

That day, among steaming pots and spices dancing in the air, I discovered that cooking is also a way of listening to a culture, of stepping gently into the heart of a people.
